I have a big sweet tooth and these simple desserts are an easy way to add treats to St. Patty's Day.
These little treats are one of my all time favorites. I love the mint flavoring and the light meringue texture.
Before mixing anything up, start the preheating process for the oven at 350 degrees. Beat 2 egg whites (i.e. room temperatures) until stiff and slowly add 2/3 cup sugar, 1/4 teaspoon salt, and green food coloring. Fold in 10-12 ounces of mint chocolate chips.
Drop on a well greased cookie sheet by the teaspoon and put into the oven. Turn off the oven and let the sheet set overnight.
