Mint Brownies
Brownies are a staple of the treat world and all you need is a little mint to bring them into the “green” holiday.
Combine 1/3 cup butter, 2 tablespoons of water, and 1/4 cup sugar and bring to boil while stirring. Remove the mixture from the heat and stir in 6 ounces of chocolate chips and 1 teaspoon vanilla. Beat in the 2 eggs one at a time. Then add in 3/4 cup of flour, 1/4 teaspoon baking powder, and 1/4 teaspoon salt into the chocolate mixture. Bake the mixture in 9×13 pan at 325 degrees for 25-30 minutes.
After pulling the pan out of the oven, spread 3-4 tablespoons of creme de menthe on top while the brownies are still hot. After everything is cooled, frost with 1/2 cup of soft margarine/butter, green food coloring (2-3 drops), 2 cups of powdered sugar, mint extract, and 1 1/2 tablespoon water and set the pan in a refrigerator to firm.
For the final step melt 6 ounces of chocolate chips and 3 tablespoons of shortening in a double boiler and spread over the top of the brownies. Again, refrigerate and cut into squares. Keep the brownies cool until served.
